Grape varieties: Corvina 70%, Corvinone 20%, Rondinella and Molinara 10%
Soil: The soil is a mixture of mainly clayey limestone rich in calcium, with a significant presence of stone and rock material. This type of soil gives the wines great freshness and elegance, which are crucial characteristics for long-lived wines.
Vineyards: The vineyards are located in a hilly area, at a varying altitude between 150 and 300 meters above sea level, with eastern and southeastern exposure.
Harvest date: The harvest usually begins in the last ten days of August and continues until the end of September.
Maturation: "Ripasso" is an ancient technique that involves the Valpolicella wine undergoing a second fermentation on the pressed skins of the Amarone wines. In this way, the fermented skins, rich in color, aroma and sugar, contribute to a second fermentation of the Valpolicella wine and improve its quality. After fermentation, the wine is aged in oak barrels of 2000 and 3000 liters for about 18 months.
