Viviani's Valpolicella Classico is a blend of 70% Corvina, 25% Rondinella and 5% Molinara from vines between 10 and 80 years old. The wine has a beautiful ruby red color with garnet hues. Seductive aromas of black cherry, red plum and spicy earth float elegantly from the glass.
On the palate there is a lovely concentration of cherry with notes of almond, wrapped in juicy tannins and a delicate, lovely acidity. Although this Valpolicella is not full-bodied, it has a nice weight that gives extra density and structure.
The finish is long and refreshing, inviting you to take another sip. A fantastic wine that clearly demonstrates the quality and charm of Viviani wines.
This is an excellent food wine that goes well with a variety of dishes, from Venetian risotto to fatty fish such as haddock or tuna, as well as pasta dishes with sausage.

Vineyard work: Continuous selection of grapes from when the grapes begin to change color until harvest.
Harvest date: Second week of October as Viviani's vineyards are located high in Valpolicella and are the reason for its elegance.
Maturation: Complete malolactic fermentation during May/June, storage in steel and cement tanks.
