Barolo "Parussi" 2020
Structure and elegance, darker fruit, long taste, suitable for storage.
Bovios Barolo Parussi has a ruby red color with brick red hues. The aroma is traditional, with notes of ripe fruit and spices. The taste is full-bodied with excellent structure, elegant and very long-lasting tannins.
Grape: 100% Nebbiolo
Vinification and aging: Gentle crushing of the grapes.
Fermentation with indigenous yeast strains for approximately 15 days in temperature-controlled wooden vats, where regular pumping over is carried out to ensure optimal extraction of colour and tannins from the grape skins. This is followed by a medium-long maceration using the submerged skin cap method, followed by racking and malolactic fermentation. The wine is then transferred to oak barrels, where it is aged for 20–24 months, before being transferred to concrete tanks to rest for a few months before bottling.
